This seems like a failing in 'git am' rather than anywhere else. quoted-printable is a reasonable way to send files by email, even if a bit OTT for 7-bit clean ASCII, and to store them in an mbox. I prefer using git send-email (or hg email) to post patch series, as it automates a tedious and fiddly task, but I don't think we can or should require it.
