I've never used Xen 3, but I don't see a reason why switching from 3 to 4 should have "eaten" 4 cores! Have you perhaps disabled hyperthreading in BIOS, or anything like that? What does /proc/cpuinfo say if booting Linux baremetal (i.e., without Xen)?
