Normally, it should not give any problem. Treat as a kernel change in a 
regular Linux installation.
Deploy the new Xen image, create the corresponding boot loader option, 
reboot. Check if everything is running fine (DomU running, control 
commands responds).
In case of trouble, fall back to the old image.
