It is not clear whether you are asking about the system to use as dom0,
domU (HVM), or both.

I have only tested it in Virtualbox. Ubuntu server and alternate desktop
install CDs can be used to install a very lean system too.

Running debootstrap for Debian or Ubuntu will also result in a very
minimal OS.
