We also saw NFS over UDP hangs on a dom0 with no bridge. This was on the RHEL 
3.4 with 2.0.5 xen 
kernel we got from Christian, using the e1000 driver on a gigE network. We 
didnt' see any problems 
when we were running on 100Mb net, so my first suspicion is the net driver.
