Any major distribution shipping Xen normally works out-of-the box. Ubuntu is one of them. Whatever your problem is, it's probably not about the right installation CD.

Gave up waiting for root device. Common problems:
       - Boot args (cat /proc/cmdline)
             - Check rootdelay= (did the system wait long enough?)
             - Check root= (did the system wait for the right device?)
       - Missing modules (cat /proc/modules; ls /dev)
    ALERT!   /dev/sda does not exist. Dropping to a shell (ash)
Does this appear in your Dom0 (host system) or in DomU (guest VM)?

Did it worked fine in any moment? Stopped to work after you did what?
