For some reason, Xen can't see any more than about 3.5GB of RAM. I can confirm this by xentop as well as xm info. I am definately running a 64-bit Dom0 kernel as when I boot into it without Xen, I can see all 32GB of RAM by running "free -m".
Has anybody come across this issue before? For what it's worth, I'm booting my system using UEFI - could that have something to do with it?
