I have had a long time debian last stable as dom0 with stable xen pkgs 
and later with xen/kernel pkgs from unstable. IMHO the stable pkgs 
doesnt have all needed features (for me) and with unstable I has had 
some crashes :( (mostly after 2-3 weeks runtime). Now I have centos6 
with ml kernels (3.3 at this time) and xen pkgs from 'Steves blog' on 
all hosts and its work really good... Till now I have found only one 
problem, pci passthrough doesnt work with pv-grub.
but it is only my subjective opinion...
