First - try to get problem when 'host' dying. Enable netconsole, use 
serial port to read kernel log and so on. It can be anything - bad 
network driver, xen error, linux kernel error, bad hardware...
Use standard debug procedures for kernel (main  - use serial or 
serial-over-ip), without detail information about crash data no one will 
able to helps.
PS You can try to boot dom0 dump version of kernel to get some 
information for debugging (see /boot and /boot/extlinux.conf).
