Try this : http://wiki.centos.org/HowTos/Xen/InstallingCentOSDomU Some newer distros (e.g. latest Ubuntu or Fedora) might not have a -xen kernel since newer linux kernels can function as domU kernel (with some limitations: http://wiki.xensource.com/xenwiki/XenParavirtOps). There are additional requirements to be able to boot pv_ops kernel (like NX cpu capability enabled, and a xen version that supports pv_ops kernel).
