Ahh!   virt-install doesn't create the logical volume for you.   You 
need to create it yourself.   If this is a "standard"  Red Hat install 
and you didn't fiddle with the volume group name when you did the 
install then do something like this:
   lvcreate -L 16G -n guest VolGroup00
   virt-install -file /dev/VolGroup00/guest ....

Where "guest" is the name you want to give to the logical volume, "16G" is its size and "VolGroup00" is the name of the volume group you in which you want to create the logical volume.
