I am running F8 myself, and I have had little trouble once I got it up and running. Watching the forum, it seems like there are more Debian users than anything. It also seems like Ubuntu has the most problems, but those are just observations. I would recommend CentOS over F8 unless newer hardware and/or features are required for your implementation. Fedora and CentOS both have their own virtualization mailing lists as well (fedora-xen and centos-virt). If you are more familiar with debian, then that probably would make more sense for you.
