If you use HVM domain, 
press ctrl-alt-2 to change to QEMU monitor
and use

change 

command there.

(to activate QEMU monitor you should specify monitor=1 in the domain
config file, but it is not secure!)


Also you can use

xm block-detach
xm block-attach


to change block devices on the fly.
