Hi guys,
let's see...
i've got my own script for bridges:

XENDIR="/etc/xen/scripts"
$XENDIR/network-bridge "$@" netdev=eth0 bridge=eth0 vifnum=0
$XENDIR/network-bridge "$@" netdev=eth1 bridge=eth1 vifnum=1

this is my interfaces file

auto lo
iface lo inet loopback
auto eth0
iface eth0 inet static
address 192.168.1.200
netmask 255.255.255.0
network 192.168.1.0
broadcast 192.168.1.255
gateway 192.168.1.231
auto eth1
iface eth1 inet static
address 192.168.2.200
netmask 255.255.255.0

and virtual machines have this in their conf files:

vif = [ 'bridge=eth0', 'bridge=eth1' ]
************
so....
when i try to create the machine... i get this:

Error: Device 0 (vif) could not be connected. Hotplug scripts not working.

Ok, /etc/network/interfaces - as you like it, don't change it for xen .. and xen won't change it.
