I just found this guide:

But it is not working for me. I searched now 2 days but there is no real 
documentation of networking in xen 3.1 out there. I would like to enable 
NAT networking and dhcp on the privates LAN side. But I don't know how 
to setup xen-NAT at all and how to enable xen-dhcp. Isn't there any 
documentation? Is xen open source still in development or stopped it 
after citrix bought xensource?
