I'm guessing the ubuntu-xen kernel you've tried has come from the recent release (gutsy I think) of ubuntu. What were the bugs you were seeing in the ubuntu kernel? There's always the enterprise distros worth looking at also. Both SLES 10 (2.6.16) and RHEL 5 (2.6.18) are based on older kernels but will incorporate a lot of fixes and drivers backported.
