Refer to this... http://www.xensource.com/files/xen_install_windows.pdf ... and forget about the fact it's a windows domU. The cdrom config should be the same. Also, you could just as easily install from the network via HTTP. Almost all the Linux flavors offer a directory named "OS" on their mirror sites to which you can point your install program. (Worked with CentOS 5 for me...)
