Do you mean peth0?

You don't use the physical NIC (eg peth0)  to connect to anywhere outside
The matching virtual interface should get it's mac, and the guest's
virtual nics get configured or automatically created MACs.

Please read docs and wiki about Xen networking. (and come back with
questions if still unclear).
