We are looking to move from Debian sarge as a dom0 to SLES10 as a dom0

supported on the IBM server platforms we have.

Is there any issues with doing this from the domU side of things? We
are running debian sarge for all our domUs and would like to keep it
that way!

You probably should test if your domU's run with the domU Xen Kernel
provided by SuSE, if they are not depending on any functionality only
in the domU Kernel on Debian your should be able to just copy you
domU's over.
Given all network configuration keeps the same, this should work. For
creation of new domU's you need to check deebootstrap functionality on
SuSE, but if you have one Debian domU left, you can also run
debootstrap there, and copy the image to the dom0 :)
