I didn't mean compilation options, just the xen/kernel cmdline options,
please use these:

xen.gz loglvl=all guest_loglvl=all sync_console lapic=debug 
apic_verbosity=debug apic=debug iommu=off
vmlinuz console=hvc0 earlyprintk=xen nomodeset initcall_debug debug loglevel=10

Plus your serial console settings for xen.gz, of course.
