Yes, those are two different binaries, with different purposes. Xen.gz is the hypervisor, the linux kernel is a (modified) Linux operating system kernel. If it's an "unpatched kernel" then it's not supplied in the source-code of Xen. Unpatced kernels come from the guest-OS install CD (or similar).
