Rodolfo,
The CIM tree is a mercurial repository.
That's the cheatsheet to download xen-unstable.
 
Basically, follow the steps there, except that the CIM repo is in http://xenbits.xensource.com/ext/os-cmpi-xen.hg

I would like to download the Xen CIM source code and schema but I don’t know the steps to follow.

Is it a cvs repository? What’s the server name? Should I download directly from Head?
