I moved the disk images and config file to another, identically configured Xen
dom0 and the system has remained stable for over an hour (as opposed to
crashing every few minutes as it was on the other machine).

Could this be memory related? Just a shot in the dark, because I only left
400Mb or so for my dom0 on the original machine...
